1. Chorizo and Eggs

This is a traditional breakfast throughout the western United States. Chorizo's spiciness pairs wonderfully with the milder flavor of eggs, especially when you top them with a mild cheese like mozzarella or queso fresca. Serve a portion of chorizo, eggs, and some rye toast—lightly buttered—for a delicious brunch or breakfast option.

2. Chorizo Fried Rice

Why not make a twist on classic fried rice? Cook medium-grain rice in chicken or beef stock, and let it cool in the refrigerator overnight. The resting time is key to a good, crispy fried rice.
