Four Delicious Ways To Use Extra Chorizo

If you ordered chorizo and ended up with a little more than you need for your typical menu offerings, don't let it go to waste! There are so many ways to use this spicy, flavorful sausage. Here are four easy ways to use up that extra chorizo in ways that your customers will love.

1. Chorizo and Eggs

This is a traditional breakfast throughout the western United States. Chorizo's spiciness pairs wonderfully with the milder flavor of eggs, especially when you top them with a mild cheese like mozzarella or queso fresca. Serve a portion of chorizo, eggs, and some rye toast—lightly buttered—for a delicious brunch or breakfast option.

2. Chorizo Fried Rice

Why not make a twist on classic fried rice? Cook medium-grain rice in chicken or beef stock, and let it cool in the refrigerator overnight. The resting time is key to a good, crispy fried rice. Next, chop up some onions and garlic and fry them in the pan with the chorizo. Add the rice, along with an egg. Scramble the egg, and toss the rice mixture around until it starts to brown.
